Summer Salad

We’ve been experiencing a bit of a heat wave for the last two weeks. After the wet and cold weather we’ve had this summer I’m certainly not complaining. I don’t, however, feel like cooking. We don’t have air conditioning so I really don’t want to turn the stove or the oven on. All this warm weather has meant that the local vegetables are finally ready. Instead of eating a hot meal tonight, I put together a summer fruit and veggie salad with a light vinaigrette. It was tasty, fresh and local!

Recipe

1 yellow pepper cut in strips
½ seedless cucumber, diced
½ cantaloupe, diced
8 to 10 radish, quartered
8 to 10 cherry tomatoes, halved
12 olives (not local, but tasty)

Dressing
3 tablespoons olive oil
1 ½ tablespoons cider vinegar
1 ½ teaspoons honey

salt and pepper, to taste

Toss the fruit and vegetables together with the dressing, wait 30 minutes and serve.
Note: Fresh mint would be great in this salad.
